Gluten free strawberry banana protein pancakes

Makes 12 Pancakes

Dry ingredients:

2 cups old fashioned oats, ground

2 scoops vanilla protein powder (I used Quest Vanilla Milkshake)

1 tsp baking powder

1 tsp baking soda

1/2 tsp pink Himalayan salt, finely ground

1/2 cup almond flour, not packed

Wet ingredients:

3 small bananas, very ripe and mashed

1 tsp vanilla

1 cup pureed strawberries (I used previously frozen from fresh)

3 Tbsp avocado oil

1 egg

1/2 cup egg whites

1/4 cup honey (I use Lees Bees!)

Process oats in a food processor until they are almost flour consistency. I like a little texture left in mine!

** note you can also use a high powered blender like a Vitamix or use pre milled oat flour**

Process the strawberries (I used previously frozen, fresh strawberries.) Put them in your food processor and pulse until pureed.

Mix the dry ingredients in a large bowl.

Mash the bananas in a separate bowl, then add all the other wet ingredients. Mix well.

Add wet ingredients to dry and stir well to combine. Mixture will be thick. Let sit at room temperature for 10 minutes

While the batter rests, preheat a large nonstick skillet or a flat top griddle to medium to medium low heat. I use a light spray of nonstick cooking spray and then gently wipe the excess out with a paper towel.

After resting the batter, use a 1/3 cup measuring cup to scoop out batter and pour onto preheated surface. Batter will still be thick, but will spread as it heats up. Cook for 4 minutes on each side.

Top with Choice of toppings! I used whipped cream and pureed strawberries. Topping not included in nutritional info. Nutritional info is for 1 – 4″ (1/3 cup) pancake.
